I really wasn't planning on making any Christmas cookies this year. Honest! But somehow December surprised me, and I found myself wanting cookies! I have been having this mad chocolate craving, and these cookies were the answer!

I mean, really, how is Christmas going to be here in two short weeks???
Chocolate Coconut Cookies

Flax egg: 2 tbsp ground flax mixed with 6 tbsp warm water
1/2 cup unsweetened shredded coconut
1/2 cup almond flour
1/4 cup brown sugar
1/4 cup cocoa powder
1 tsp baking powder
1/4 tsp salt
2 tbsp unsweetened almond milk
1/4 cup nutty butter (or almond butter)
1/4 cup mini chocolate chips
Preheat oven to 350 degrees F.
In a small bowl, mix the flax egg and let sit to gel.
In a medium sized bowl, mix together the dry ingredients: coconut, almond flour, brown sugar, cocoa powder, baking powder and salt. Mix in the milk and nut butter. The dough will be thick. Fold in the mini chocolate chips.
Spray a baking sheet with nonstick spray. Wet hands, and form dough into small balls. Bake for 11-13 minutes. Remove from oven and let cool on the cookie sheet for 5 minutes. Move to a cooling rack to cool completely.
Makes 32 small cookies.
